Zucchini Bread 

I’m a major bread fan and so isn’t all of my family. We all love bread including zucchini bread so why not add a streusel on top to the bread to make it more satisfying? 🤔 Oh wait, there is no right answer to that unless you love streusel topping! 😍😋


It’s so good, you’ll want to save this recipe for later!

Ingredients:

Brown Sugar Oat Streusel

2/3 cups (60g) old-fashioned or quick oats

1/2 cup (100g) packed light or dark brown sugar

2 Tablespoons (16g) all-purpose flour

1/2 teaspoon ground cinnamon

1/4 cup (60g) unsalted butter, cold

optional: 1 Tablespoon (10g) milk chocolate chips

Zucchini Bread

1 large egg, beaten

1/2 cup (100g) packed light or dark brown sugar

1/2 cup (100g) granulated sugar

1/2 cup (120ml) vegetable oil*

1 cup grated zucchini (about 1 medium-large)

2 teaspoons vanilla extract

1 and 1/2 cups (190g) all-purpose flour (spoon & leveled)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

optional: 3/4 cup (135g) milk chocolate chips

Directions:

Preheat the oven to 350°F (177°C). Grease a 9×5 (or 8×4) inch loaf pan. Set aside.

Make the streusel first by combining the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the cold butter with two knives or a pasty cutter (preferred) – or you may use your hands. Mix until the streusel resembles coarse crumbs. Stir in the chocolate chips with a spoon. Set aside.

In a medium bowl, whisk together the beaten egg, brown sugar, granulated sugar, oil, zucchini, and vanilla until evenly combined. In a large bowl, toss the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and chocolate chips together. Pour the wet ingredients into the dry ingredients and mix with a large wooden spoon or rubber spatula until combined. Avoid overmixing.
Spread batter into the prepared loaf pan. Bake the bread for 20 minutes at 350F degrees. Remove from the oven and top with the streusel – press it down into the top. The reason you are adding it after 20 minutes is to prevent it from sinking to the bottom of the bread as it bakes. Return to the oven and bake for an additional 25-30 minutes or until a toothpick inserted in the center comes out clean. I covered the bread loosely with aluminum foil after 35 total minutes to avoid the top from getting too brown. Allow bread to cool in the pan set on a wire rack for at least 1 hour before removing from the pan and serving.

Cover and store leftover bread at room temperature for up to 5 days.

Note: I love to double this recipe if not triple it to make even more so I can freeze it for later!

Chocolate Pumpkin Energy Bites 


As summer comes to an end and we head into fall and pumpkin 🎃 season I figured a recipe that included both chocolate 🍫 and pumpkin 🎃 together would make a lot of people happy during fall and Halloween time. This recipe is an amazing snack idea for adults or kiddos. How could you go wrong with chocolate? The answer is… you can’t!

Ingredients: 

1/2 can 100% pure pumpkin
2 cups whole grain or gluten free oats
1/2 cup peanut butter (I like crunchy for extra texture)
1/4 cup chia seeds
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 tbsps cocoa powder
1/4 cup dark chocolate chips
1/4 cup pumpkin pie spice chips

Directions:

Mix all ingredients together in a bowl. Use your hands to make golf ball sized bites. Place bites on a parchment paper covered sheet pan. Freeze for at least one hour.

Can be stored in the fridge for up to a week or the freezer for much longer!

This recipe made about 18 balls for me. I would count 2 or 3 of these as one serving for a snack or dessert!

Where I get my Food Creativity from?

I personally think that everyone has some originality just by some of the things they do, whether it’s crafts or woodwork or even cooking and baking. I know that creativity can run in families but just in different unique ways. In my family inventiveness definitely runs in my family but each family members has different artistry which is what I love about my family. In addition at the same time some of us have the same creativity as well.

My individuality is shown in different ways including baking and cooking, crafts, sewing, blogging, music, & so much more.

In some ways I think I have food and dessert ADD or ADHD to say the least, which at times I’m proud of because it makes my individuality stand out even more! Personally I was diagnosed with ADHD at a young age so at time I think my ADHD doesn’t help me with my food creativity or my creativity in general.

My ideas for food, unique food recipes, etc randomly pop up in my head while I’m riding horses, reading, cooking and baking other deliciousness, spending time with my wonderful family, watching TV… specifically the Food Network Channel but also when I’m watching non-foodie shows, and probably once I start working out in the gym again I’ll be thinking about food which will give me even more ideas to give a try. There’s times where I’m thinking of unique food ideas and recipes to try that just magically make a theme pop up in my head that help get my individuality going even more, I love it! In addition, I also sometimes get inspiration from other bloggers or y’all or my family members!

I have to admit that my individuality when it comes to baking and cooking is one of my favorite parts of blogging!

My Favorite TV Shows

Everyone has their favorite shows they love whether it be drama shows, reality shows, comedy shows, sports shows, animal shows, romance shows, children shows, geeky shows, or shows that you actually learn something also know as educational shows. Everyday there’s something for watching TV that I like in addition to Netflix. New Episodes are coming out each week, new shows are being created all the time, new seasons are coming out each year or bi-yearly. I think a persons list of favorite TV shows is never ending because you can add more shows to your list of favorites as more are created or you get into that you never liked before and than all of a sudden they’re your favorite. Fall Drinks Equal Deliciousness

I know in my neck of the woods Fall weather has officially hit, actually it hit the later part of August which broke my heart because I love summer time but I also love fall as well so I’m enjoying the fall season especially apple picking and all the fall baking I can possible do because I can’t contain myself. My Favorite Movies


It doesn’t matter whether it’s winter or sick season for me as I personally love watching movies anytime of year. I’ve been known to watch movies in Spring, Summer, & Fall; just like I do in Winter. Watching my favorite movies keeps me relaxed at times or is just fun to do when there’s nothing better to do. Especially when you’re sick. But I love watching movies on a cold day during fall and winter because it’s comforting for me. I don’t really know why it’s so comforting to me.

Suicide Awareness Day: September 10th

Today I thought I would write a post that touches home to many people I know and I’m sure lots of strangers. I know it happens often and my family had to go through it a few years back with one of my uncles. Anyways, over the years I’ve heard many people say that people commit suicide because they’re selfish which isn’t the case at all. It’s because they’re hurting and are tired of the pain, it’s hurts the family’s of those who commit suicide when you say their family members committed suicide because they’re selfish when that definitely wasn’t the case.

In honor of suicide awareness day; September 10th, 2017 I would write a little bit about suicide awareness as I’m sure suicide has touched a lot of people’s lives including strangers who will be reading this. I personally am logically and need to see the facts/statistics written out so I can visualize them in my head to be able to comprehend them.


Facts & Statistics about Suicide:

  • Suicide is the 10th leading cause of death in the United States.
  • Each year 44,193 Americans die by suicide.
  • For every suicide 25 attempt.
  • Suicide costs the United States $51 billion annually.
  • On average, there are 121 suicides per day.
  • Firearms count for almost 50% of all suicides.
  • Men die 3.5x more often than women.
  • Suicide is the second leading cause of death for ages 10-24.
  • Suicide is the second leading cause of death for college-age youth and ages 12-18.
  • More teenagers and young youth adults die from suicide than from cancer, heart disease, AIDS, birth defects, stroke, pneumonia, influenza, and chronic lung disease;  COMBINED!
  • Four out of five teens who attempt suicide have given clear warning signs.
  • Each day in our nation, there are an average of over 3,470 attempts by young people grades 9-12.

There’s some facts about suicide for y’all to think about! Hopefully this makes some people think twice before spouting off that the person/people who commit suicide are selfish because that isn’t the case, actually that’s far from it; it’s because the person who commits suicide is tired of hurting.

From the family member of a family who lost someone because they committed suicide please think twice before you say that to the family/friends of the person who committed suicide!
